Stiff Peaks

Don't you think it is a mini miracle that you can take the whites of four of these -


- whip them with some sugar and end up with this glorious mass?


Then, if you are like me and Nigella (well, it is her recipe) you add chocolate. Just about everything is better with chocolate! Spread it out in a wonderful, glossy, sticky circle and bake long and slow.


Before you know it you have this -


Only don't try to take it off the baking paper too soon, like I did. Just saying. Because it has a tendency to want to break up. Though I did have tantalising glimpses of a gooey chocolaty centre under that crisp crust.

Now I just have to add whipped cream and a whole heap of raspberries. Only my guests won't be here for a little while. And I will be on my second glass of wine (at least) by the time desert is served. So the chances of further photos are slim. But I promise to have a bit for you too, if you like.
